style, meaning little pearls in Italian (or slight effervesces). It is made from a fruity
chardonnay with flavors of pears and pineapples.

Classico - This wine is a rich, hearty Red blend. It gives a variety of berry
and spice flavors. It has firm tannins and finishes with a full palette. Blends: Cabernet

Carignane – This wine is a Spanish varietal that has floral hints. It is full
bodied with soft tannins. The finish has currants and berries with sustained

Reserve Cabernet Sauvignon (2005) – This wine is a rich, hearty Cabernet from our Doss Valley Vineyard that
has been aged in American oak. It is full bodied and gives a variety of berry, cherry, and
spice flavors. This wine has excellent characteristics for aging. $7.95 glass / $24.95

Claret (2005) – This wine is a proprietary blend of Bordeaux’s
with rich dark cocoa on the nose. A transition to plums with other stone fruit occurs in
the midrange. The finish is dry and well structured. This wine has excellent

Mourvedre (2005) – This wine is Spanish varietal with Moroccan spices and caramel in the
introduction. The finish has soft tannins and strong hints of Arabic coffee. $29.95

Parada - This
Spanish style table wine is a parade of flavors with creamy white chocolate and sweet oak
on the nose. The mid-range has currants and a lingering finish of buttery soft tannins. $34.95

Sangiovese (2005) – This wine is full bodied and gives a mid-range variety of berries and
creaminess, with a wild cherry crescendo finish. It has a rich red color and has been aged

Amore
de Tuscano (2005) - This wine is a blend of Sangiovese and Syrah and begins with a medley of
Mediterranean spices on the nose. Black Cherries are in the front and midrange with creamy
oak on the finish. This wine is well structured and has good tannins. $29.95 bottle / $359.40

Touriga Nacional
(2005) – This wine has superb complexity and is
excellent for aging. The introduction has mint, rosemary, and raspberry and cherry
in the midrange. The finish is oregano with soft tannins and soft mouth-feel. $39.95

Petite Syrah
(2005) –
Our limited bottling was handcrafted exclusively for Petite Syrah lovers. This wine has
solid structure throughout with an introduction of wild berries. The finish has mature
tannins with a splash of creaminess and many dark fruit flavors. The grapes come from our
Doss Valley Vineyards and the wine was aged in American oak. This wine has excellent
characteristics for aging in your cellar. $99.95 bottle / $1199.40 case (tasting
on selected weekends only with separate tasting fee)
Ports
Tango Port - Tango has Palm Springs dates on the introduction with coffee,
berries, and prunes in the intermezzo. Carmel is noted throughout and the finish is Crème
Brule. This port is fortified to 18% and was aged for 24 months in American oak. It is
hand bottled in imported bottles and wax sealed.

Porto Blanco –This port is made from
Moscato Blanco grapes. The introductory has
distinct aroma of Moscato and rich midrange with a hazelnut finish similar to Spanish
Sherry. This port is fortified to 18%. It is

Chiaro de Luna – This fragrant white wine which is made in a Venetian style gives the fruitiness of
pears and peaches with light sweetness.
This wine is reminiscence of wine served at Renaissance banquets. Serve

Gewurztraminer – This wine is a sweet white that is spicy and
fruity with green apples, pears, and wildflowers. It is an estate bottled wine from
